Coffin Bay Oysters - South Australia

 

 

The South Australian Oyster Industry has proven to be a producer of world class oysters in both condition and taste. Established in the late 1980's the SA oyster industry now consists of seven growing regions which pride themselves on producing a premium product for both domestic and international consumers. Oysters South Australia derive their taste from the regions in which they are grown, and they are often sold under specific Bay names.

South Australian oysters are recognised as a quality seafood product, cultured in some of the cleanest, most unpolluted waters in the world. At the point of sale oysters have a creamy appearance, fresh ocean smell, and unique cupped shell filled with juicy plump meat. Each growing area is distinguished by its unique and succulent South Australian taste.

Points of difference which give Oysters South Australia the edge include:

  • South Australia has very low rain-fall and as a result there is little run-off from roads or agricultural areas that may have the potential to pollute our growing regions.

    The low population density around South Australia's coastline, especially on Eyre and Yorke Peninsulas where our industry is focussed, reduces the risk of pollutants entering our waters.

  • All South Australian bay waters originate from the clean untouched and unpolluted Southern Ocean with the nearest land being Antartica.

Oysters from South Australia are not only delicious, they are also one of the most nutritionally balanced food available, they contain protein, lipids and carbohydrates.

It has also been suggested that oysters are an ideal food for inclusion in low-cholestrol diets. Oysters are an excellent source of vitamins A, Bi (thiamin), B2 (riboflavin), B3 (niacin), C (ascorbic acid) and D (calciferol).

Four to five medium sized South Australian oysters will supply the recommended daily allowance of iron, copper, iodine, magnesium, calcium, zinc, manganese and phosphorus.

 

 

Southern Bluefin Tuna

 

 

We are really excited to have sourced fresh sashimi grade Southern Bluefin Tuna from the clear tranquil waters of Port Lincoln, South Australia. 

The tuna are completely free from anti-biotics, growth hormones and genetically modified substances.

Australia supplies the global sashimi market with fresh and frozen tuna that meet the highest standards of quality, safety and sustainability.

The tuna are caught in the Great Australian Bight by purse seine nets between December and March each year.  They are then transferred by divers into sea cages and towed back to Port Lincoln to large grow pens that give them more space to swim than any other type of aquaculture industry in the world.

 

The tuna are in the pens for only a few months and are fed the highest quality baitfish so they can be fattened to premium sashimi grade.

Crystal Bay Prawns

 

 

Crystal Bay prawns are grown in the pristine environment adjacent to two world heritage regions of tropical Far North Queensland.  Hinchinbrook and the Daintree area near Port Douglas.

Crystal Bay prawns are the only sashimi grade prawns available in Australia.  They are graded and processed to stringent sashimi grade standards ensuring the highest quality for the Japanese and Australian domestic market.

For this reason, many high profile chefs including Tetsuya Wakuda of Tetsuyas, Shannon Bennett of Vue de Monde and Neil Perry of Rockpool to name a few, grace their menu's with Crystal Bay Prawns.

Conveniently packed in 1kg Boxes, each prawn is individually frozen within moments of harvest, locking in the freshness that Crystal Bay Prawns are renowned for.

Crystal Bay Prawns are delicious cooked but being sashimi grade, are good enough to eat raw. Please do note that when cooking them, it is best to remove the shell.
